Chả Giò (Vietnamese Crispy Spring Rolls) have been a staple of Vietnamese cooking for generations, and at Bolsa Restaurant they remain one of the most popular items on the menu. Our spring rolls are made fresh with a filling of seasoned ground pork, transparent glass noodles, rehydrated wood ear mushrooms, finely shredded carrot, and taro — all bound with egg and aromatics for a cohesive, flavourful filling.
Each roll is carefully wrapped in a thin layer of rice paper before being deep-fried until perfectly golden and shatteringly crisp. The result is an incredibly satisfying crunch that gives way to a savoury, fragrant interior. The secret to great Chả Giò lies in the wrapping technique and frying process. Too much filling causes the rolls to burst; too little and they are hollow and unsatisfying. At Bolsa Restaurant, our kitchen team wraps each roll with the right proportion of filling to wrapper — tight enough to hold shape, with enough surface area to crisp up beautifully in the fryer. The rolls are fried in small batches at the right temperature to ensure even golden colour without any greasiness.
